I think you can do this, just not in the Party Shuffle mode (where it does tend to latch onto a few songs for no clear reason and play them over and over). If you just start it playing in a particular playlist, and turn shuffle on, it'll go through the whole thing once, then stop.

We do this with the iPod all the time.
